How to Make a Watermelon and Cucumber Cooler Sep 8th 2012, 16:00 Cold watermelon and cucumbers are very refreshing on a hot summer's day. This wonderful sweet and tart cocktail will quench your thirst and, apart from the alcohol content, will contribute a few additional powerful antioxidants to your system. Edit Ingredients Servings: 4 - 5 cups seedless watermelon, chilled and cubed
- 1 large cucumber, chilled, peeled and cut into chunks
- 1/4 cup lime juice, freshly squeezed (from 2 limes)
- 2 tbsp honey
- 2/3 cup vodka
- Ice (1 tray)
- Cucumber slices for garnish
- Chill the vodka in the freezer for one hour.
- Puree the watermelon and cucumber in your blender or food processor.
- Stir together in a small bowl the lime juice and the honey until the honey dissolves.
- Pour the vodka into the blender.
- Add the watermelon and cucumber puree, lime and honey to the blender.
- Blend just until all the ingredients are well combined. This should take about 30 seconds.
- Fill four glasses to the top with ice cubes.
- Pour the cocktail over the ice and garnish each glass with a slice of cucumber.
- Finished.
- This drink is delicious without the alcohol, too. Just puree a kiwi with the watermelon and cucumber to make up for the lack of vodka. You can also add a dollop or two of plain yogurt to the puree.
- A sprig of fresh mint also makes a nice garnish, alone or combined with the cucumber slice.
- You can adjust the amounts of honey and lime juice to suit your taste. The amounts called for in this recipe result in a slightly tangy drink.
Edit Warnings - Both cucumbers and watermelons are 95% water and they help keep your body hydrated, but keep in mind you are also drinking vodka, which is dehydrating, so it is wise to drink a glass of water between cocktails.
