If you leave this recipe to steep for weeks, you'll end up with a gorgeous syrupy amber liquid which is deeply infused in Christmas pudding spices and flavours and deceptively strong. This would make a gorgeous gift plus you also get your own treat––a jar of vodka soused dried fruit! A very Merry Christmas indeed.

Edit Ingredients

  • 1 bottle (about 700ml/23.6 fl oz) vodka
  • 250g/8.8 oz dark brown sugar
  • 100g/ 3.5 oz mixed peel
  • 250g/8.8 oz sultanas
  • 150g/5.2 oz raisins
  • Grated rind and juice of 1 orange
  • 1 tsp almond essence
  • 6 cloves
  • 2 cinnamon sticks
  • 2 vanilla beans, split, seeds scraped
  • 1/2 tsp nutmeg
  • 1 tsp mixed spice (aka pudding spice or pumpkin pie spice)

Edit Steps

  1. Place all of the ingredients in a large bowl. Cover well with plastic wrap or lid. Reserve the vodka bottle and cap for reuse later.
  2. Set aside in a cool place for 1 week, stirring once a day. Your pantry, food cupboard or an out-of-the-way bench space is ideal for storage during the week.
  3. Strain the contents through a very fine sieve, pressing down well to extract all the liquid. Keep the fruit for separate use in desserts or baking. (The fruit can be stored in a jar in the refrigerator up to a week.)
  4. Pour the liquid back into the vodka bottle. Keep a steady hand so as not to lose any! A funnel will make the pouring a whole lot easier.
  5. Screw the cap on tightly and keep in the refrigerator. The vodka can be stored in the refrigerator for up to 6 months.
  6. Serve. Serve with mince pies, Christmas cake or any other delicious holiday season fare. Cheers!

Edit Tips

  • For an added treat, you can remove the cloves, cinnamon sticks and vanilla, and fold the remaining macerated fruits through softened ice-cream to create a very boozy pudding.
  • This Christmas pudding vodka is most delicious mixed with ice cold lemonade!
