How to Make Mint Marble Cake

This mint marble cake is a delectable mixture of white cake, chocolate, and mint. Great to snack on, it's also ideal for birthdays and special events. This very simple recipe is fun to make with friends, perhaps for a movie night together.

Edit Ingredients

  • 2 1/4 cups cake flour, plus some extra
  • 1 1/2 cups (preferably baking) sugar
  • 3 1/2 tsp baking powder
  • 1 tsp salt
  • 1/2 cup soft shortening or margarine
  • 1 cup milk; divided into 2/3 cup and 1/3 cup
  • 1 1/2 tsp mint (or peppermint) flavoring
  • 4 (or 1/2 to 2/3 cup) egg whites, unbeaten
  • 1 oz/28g (or 1 square) unsweetened chocolate
  • 1/4 teaspoon baking soda
  • 2 Tbsp warm water
  • Mint sprigs (optional)

  1. Preheat the oven to 350ºF/180ºC.
  2. Grease and lightly flour the baking pan. To do this, start by spray-greasing the pan. Now, grab a smaller handful of flour and coat the pan. Shake out excess flour.
    • Alternatively, some bakers find that it works best to line the pan with wax paper and grease that.
  3. Sift together the flour, sugar, baking powder, and salt into the mixing bowl.
  4. Add the shortening, milk, and peppermint flavoring to the mixing bowl.
  5. Beat for 2 minutes.
  6. Add in the remaining milk and egg whites.
  7. Beat for another 2 minutes, and pour 2/3 of the batter into the pan(s).
  8. Melt the chocolate over the stove in a saucepan. Stir continually.
  9. Add the chocolate, baking soda, and warm water to remaining 1/3 cake batter. Mix thoroughly.
  10. Pour over white batter in an odd pattern. Using a knife, drag through the batter to create swirls.
    • If desired, you can draw on designs. For extra fun and preciseness, put the chocolate mixture into a small plastic bag and cut a tiny bit of the corner off. To use, simply squeeze.
  11. Bake for 30-35 minutes. To see if it's done, insert a toothpick into the center and then pull it out. If there is no batter sticking to it and the toothpick is clean, then the cake is done.
  12. Cool, frost with your choice of chocolate icing or frosting. Serve with ice cream and garnish with mint leaves, if desired.
