How many times did your mother tell you that breakfast is the most important meal of the day? Well I'm telling you again, but I'll also actually offer a suggestion to accomplish it instead of just nagging you. Not that I won't nag you a little, though. Breakfast gets you ready for your day—do you want your day to feel like a Pop Tart? I'm not entirely sure what the emotional equivalent of a Pop Tart is, but I'm guessing it's only a step up from that of a Hot Pocket. Which I think we can all agree is not good.
According to the good medical professionals at Mayo Clinic, people who eat breakfast are generally more likely to take in more vitamins and less fat, better control their weight, be more productive in the morning, and have lower cholesterol. There are even more fun-sounding benefits for kids who eat a good breakfast, including more creativity and better hand-eye coordination. And besides all that, breakfast food is delicious! (To digress for a second, if you’re ever at The Copper Dome in St. Paul, try their apple and cheese omelette. Sounds weird, but it will change your life. Apple pie inside of eggs. Fantastic.)
Now to offer a breakfast option that’s actually healthy. For a super cheap and easy breakfast, just dice up a bunch of potatoes and other veggies, put individual serving sizes in baggies, and throw them in the freezer. In the morning put a little oil in a pan, grab a bag of frozen hash browns, brown them a bit before cracking an egg or two in the pan with them, and you're set.
This is my favorite kind of recipe, because it involves almost no precise measurements, or even precise ingredients for that matter. Just throw whatever you want in there! To start, use a three-pound bag of red potatoes, 3‒4 bell peppers, and an onion. That’s about a month's worth of breakfasts depending on how big you make your serving sizes. It takes a little longer than pouring a bowl of cereal, but it's much more nutritious and will actually keep you full until lunch time.
