Cod is a fish with a delicate, white flaky but firm flesh. It can be prepared in a number of different ways but baking is a good method because it helps to concentrate the lovely flavor of this fish. Baked cod is a very easy dish to prepare and is perfect for fixing a quick and nutritious meal when you're busy.

Servings: 4

  • 1 pound (450g) fish fillets, such as cod; if you need to clean and gut the fish before cooking, do so first
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon butter or margarine, softened
  • 1 tablespoon lemon juice
  • 1 teaspoon onion, grated
  • Paprika, if desired

Edit Steps

  1. Clean fresh fish or thaw frozen fish fillets, if using.
  2. Preheat oven to 350ºF/180ºC.
  3. Season both sides of the fish with salt and pepper, to taste.
  4. Mix together the soft butter or margarine, lemon juice and onion. Place the fish on the baking dish.
  5. Pour the butter or margarine mixture over the fish fillets.
  6. Bake the fish 20 to 25 minutes or until the fish flakes.
    • Serve with steamed vegetables, rice/noodles or other preferred accompaniments.
