The Election Day cake has a long association with being baked and served on Election Day. This old-fashioned cake uses spices, fruits, and sometimes even yeast for leavening. The following traditional recipe is a modernized version adapted from the Boston Cooking-School Cookbook by Fannie M. Farmer, originally published in 1918.

Boiled Milk Frosting
Cake
- Add butter to bread dough.
- Dredge fruit in 2 tablespoons flour.
- Add all the remaining ingredients to the bread dough. Mix well to combine.
- Butter a bread pan and add the dough.
- Let dough rise 1 1/4 hours.
- Preheat oven to 325ºF/170ºC.
- Bake cake 1 hour.
Frosting
- Add the butter to a saucepan. Melt butter.
- Add the sugar and milk. Stir well.
- Bring the mixture to the boiling point and cook 13 minutes.
- Remove saucepan from the flame and then beat until the frosting is of spreading consistency.
- Beat in the vanilla.
- Pour frosting over the Election Cake.
- Use the back of a spoon or knife to make decorative swirls once the frosting has firmed up.
- Finished.
