Any standard box usually calls for either water or oil, eggs, and/or milk for the finishing batter, but there are many other ingredients that can spice up that "basic" mix and turn into something special. - Add fresh or frozen fruit to the batter. Be advised that some frozen fruit, such as blueberries, might "bleed" the color through the baked item while it bakes, while fresh fruit may enhance any crispness or taste in each bite, such as by adding of cooking/tart apples.
- Distribute dried fruit in your muffins. Dried cranberries are an excellent substitution for blueberries or any fresh fruit and add some crunchiness to any muffin. If a recipe calls for a cup of fruit, substitute dried cranberries for 1/2 cup of dried fruit. Plump them up in size by placing them in juice or hot water in advance.
- Add extra moisture to your muffins. A healthy substitution to use when a recipe calls for eggs is either bananas or applesauce. Typically a half to a whole banana, or 1/4 cup applesauce, will do the trick for each egg needed. The flavor and texture will improve with these additions.
- Treat yourself with nuts and chocolate chips. Sprinkle about 1/4 cup or so into your batter. These additions will create a more dessert-like muffin.
- Use pudding or jam as a filling. Add about a spoonful of muffin batter into your muffin pans. Then add a small dab of filling on top of it before covering the filling with more muffin batter. Be sure to use a small amount in the center or else it might ooze out after it has baked.
- Sprinkle toppings on the muffins. A quick mix of butter, brown sugar, and flour creates a dashing streusel topping. Frostings aren't just for cakes and cupcakes; add some on your muffins as a special glaze. You can leave them plain if you prefer to have them with butter or jam later on.
